What about the Text Along a Path command? that would allow you to still edit the text

Yes, but with additional complexity. (objects & mouse clicks).

What I'm thinking of is:

Select Text

Cmd E

Enter distance- done

The font/size/alignment etc would all continue to be available in the OIP.

Do you think a simple "Extruded Text" Plugin object would be sufficient, that allowed editing the text constantly and adjusting its characteristics including extrusion depth from the OIP, or is it common enough that users chamfer or fillet the edges of these extruded letters that those two functions should be added to the request for the new PIO as well? (I've had a few users ask about that in the past, mostly to create rounded bubbly lettering)

chamfer and fillet is a must have for extruded text. Actually, it's a must have for extrudes.

It could get interesting/tricky.

The fillet radius would need to be variable to create truly bubbly text.

You'd also need the option to fillet front face only

but yes, it would be useful and certainly cool.
