What you can do is go in the editing mode. Prior to editing mode click the checkbox to use the edit view as icon view. Inside the symbol turn off the class you want to hide and once you leave the edit mode the icon changes ! Quote Link to comment

Just set visibility of your classes, select all your (needed) Symbols in ressource browser, right click (> bottom of the list) Set either "Set Thumbnail View" or "Set Thumbnail Render Mode" to a different value and all Thumbnails will be re-rendered in the new appearance. For me this more a bug than a feature, because, if you are in a file with class visibility set for working, and edit a Symbol, your Icon will be destroyed. And it happened for me that VW does sometimes a "refresh" of Symbol Icons where it destroyed even Symbols that I did not edit. Repairing the Icons the way I described above can take quite some time if you have a lot of complicated Symbols. So I vote for a class on visibility for Symbol Icons.
