How do you add thicknes to a simple roof?

I'm not sure if this will work for you, but there is a CreateRoof function with a thickness argument.

Also, you could try calling SetObjectVariableReal(roofHandle, 170, theThickness); with selector of 170 to set the thickness of a "slab" object. See the VS Function reference Appendix G - "Object Selectors"...specifically the table for "Roofs, Floors, Columns".
