In essence, it's like it registers the click and release as separate actions within the menu. So if you wanted to assign an object to the class Stage-Scenic-Drape, when you clicked on Stage to expand the class it would automatically assign it to the first sub-class of 'Stage'. An odd variation is that if you don't release the mouse click, it will open the class and allow you to drag to the correct sub-class; releasing the mouse then assigns it to that class-subclass
I've personally found this much more repeatable within the Device Builder Tool (as in the linked video), where selecting the type of equipment or manufacturer.
A bit more playing around and it might be related to when the dropdown changes length, meaning the mouse release happens in a different place within the list compared to the down-click. When the class/manufacturer/type is expanded with the list scrolled to the top or bottom of the list, the list extends when the sub-category is revealed but maintains the scrolled position, so the option the mouse is over changes.
Oddly this only seems to affect windows installations, testing the same behaviour on a mac doesn't behave the same way, with menus working in the expected way, possibly the expansion/contraction of menus is handled differently in the different GUI's.

VW2025 update 2.1, Windows 11 24H2.
Having an issue where vectorworks will register multiple clicks within dropdown menus, for example when assigning an object to a class, or in the connectcad device builder tool when selecting a device type or a specific device.
