Tool Defaults

I find I often perform multiple operations of Organize Custom Selection, selecting the same options each time, and it would be extremely helpful to have the default be the same operation as the one I just did, rather than having to re-select each time. It would also be nice if the default for the last used tool was the same as it's last operation rather than the operation of another tool (such as the thickness for double line tool and wall tool).

For your second request: you can create a command for CUSTOM TOOL / ATTRIBUTE in the organize menu. Make sure that all of your settings, including line weight & fill, etc. are set the way you want them AND that the appropriate tool is selected. Then simply go to the above menu item and check the boxes as desired.
