This has been a problem for years. There is no easy solution.
Create the classes you want
Insert symbols in the new doc
edit the symbols to only use those classes.
insert the edited symbols into a working document
A script or the Class and Layer mapping command might help, but that command wasn't designed for this purpose.
I think the classes used by VWX were created by PRG/VER and might possibly make sense to those companies, but not to any designer I know.

This is an ongoing issue.It is harder and harder to defend, "features" are introduced and implemented to great hoopla. However, they do not work as needed. Sometimes that is they work as designed, but the design does not match the users' needs. I think this is one reason I have abandoned the Clipcube feature.
It is a problem throughout the program.
As one colleague (he can identify himself if he desires) often states, VWX needs a maintenance release. Apple has done this with MacOS and iOS, one release version does nothing but fix bugs. We need that version.
In the meantime when I hear what if we did this or what if we add that, my thoughts go immediately to what will break?

I think the arrays would;d have to be saved as symbols

Not if that projector is a hybrid symbol, I do not think, but if it's 3D only, should be fine.

It has to be a texture. The image fill is only or 2D objects, as far as I know. If it is one screen shouldn't be a problem, that's part of why I start with existing stock content. I will size the texrture in photoshop ahead of time if required.
If you're using multiple screen objects, then you willed the Landru Design version of the PIO and the Video Tile Command.
Typically you select a 3D object and can assign a texture in different ways, In this case you have to use the OIP and the 3D Options button

I usually duplicate one of the textures in the stock content and then change the image in the texture definition.

The book was written using a specific release and the Designer Package. Your mileage may vary. Page 303 gives a broad overview or creating a record format and a report. To create the report, you use the Tile Block Record, that might not be the correct name, but there is a record if you're using a stock title block, which I recommend.
I thought there as also a bit about creating a record and using it to count benches somewhere, but I might have written that for some other purpose.

I have not done the comparison, but somewhere along the way VWX added the option to export PDFs as rasterized. I prefer them to be vector, so I don't look for this option. I wonder if it has become default in 2024?

The report is called Drawing List, so that might affect your search. I don't where it is and is not included, but it is simple enough to create. It just reports back the fields for sheet number and title.

If only we could define the specific size of the frame. I use the GL to show scenic symbols and it is a huge PITA to get a uniform size when the GL might be refereeing multiple Viewports.

I have to try LIDAR, new device that has the tech, but how does it deal with 'stuff' in rooms?

I guess it would depend on the final task. I see the Room Plan as a place to start. Then it would depend on the build and how close I needed the survey. If I needed a tight fit, I would measure everything. If I was adding a piece to a location, close enough.

I've used apps for room plans. they're OK, close generally. Photos to 3D, for me, is for visualization not detailing.
